"Paneer Masala Dosa"?
It's a delicious variation of the traditional dosa that incorporates paneer (Indian cottage cheese) and a flavorful masala filling.
Here's a recipe for you:
Ingredients:
- For the dosa batter:
- 1 cup rice
- 1/4 cup urad dal (split black gram)
- 1/4 cup chana dal (split Bengal gram)
- 1/4 teaspoon fenugreek seeds
- Salt to taste
- Water (as needed)
- For the paneer masala filling:
- 200 grams paneer, crumbled or grated
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 green chili, finely chopped
- 1/2 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves, chopped (for garnish)
- For the coconut chutney (optional):
- 1 cup grated coconut
- 2 green chilies
- 1/2 inch ginger
- Salt to taste
- Water (as needed)
Instructions:
1. Soak the rice, urad dal, chana dal, and fenugreek seeds in water for about 4-6 hours. Drain the water and grind them together to make a smooth batter. Add salt and water as needed to achieve the consistency of the pour. Let the dough ferment overnight or at least 8 hours.
2. For the paneer masala filling, heat the oil in a pan over medium heat. Add the chopped onions and green chillies and fry until the onions are translucent.
3. Add the ginger-garlic paste and fry for another minute until fragrant. Then add the chopped tomatoes and simmer until soft and mushy.
4. Add turmeric powder, cumin powder, coriander powder, red pepper powder and salt. Mix well and cook for a few minutes.
5. Add the crushed or grated paneer to the pan and mix with the masala. Simmer for 3-4 minutes to blend flavors.
6. Heat a dosa tawa pan or nonstick skillet over medium-high heat. Add a ladleful of dosa batter to the frying pan and spread in a circular motion to form a thin dosa batter. Apply a little oil around the edges.
7. When the dosa starts boiling and becomes golden brown, place the paneer masala filling in the center of the dosa. Fold the dosa on both sides to cover the filling and form a roll or semicircle shape.
8. Flip over and bake for an additional minute.
9. Repeat the process to make more dosas with the remaining dough and fillings. 10. If desired, blend chopped coconut, green chillies, ginger and salt in a blender to make coconut chutney. Gradually add water to achieve a smooth consistency.
Serve Paneer Masala Dosa with warm coconut chutney and enjoy its delicious flavor.
