Grilled Caprese Chicken Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 cloves of garlic (minced)
- 1 tsp Italian dry seasoning
- salt and pepper to taste
- 4 fresh mozzarella cheese
- large 2 tomatoes (sliced)
- fresh basil leaves
balsamic glaze (optional) Instructions:
In a small bowl, combine balsamic vinegar, olive oil, minced garlic, dried Italian spices, salt and pepper.
Place chicken breasts in a shallow bowl or resealable plastic bag.
Pour marinade over chicken, making sure each breast is covered
Remove chicken from marinade and drain excess marinade. .
Grill chicken breast for about 6 to 8 minutes per side or until internal temperature reaches 75°C (165°F).
Place a slice of mozzarella on top of the chicken breast for the last few minutes of grilling to let it melt slightly.
Remove the chicken from the grill and let it rest for a few minutes.
When ready, top the chicken breast with tomato slices and fresh basil leaves. Apply balsamic glaze if desired.
